Master Butcher and Production Manager

Job description

My client is a leading gourmet meats manufacturer, utilizing quality ingredients from around the world to manufacture authentic and quality products for the Singapore market. They are looking to hire a Master Butcher to join them.

Your responsibilities will include:

  • Overseeing the production of all products within the company.
  • Managing resource allocation, ensuring profitability, and upholding high standards of hygiene and food safety.
  • Conduct checks to minimize wastage and spoilage, implementing recommendations to reduce occurrences.
  • Monitoring the production process, including cleaning, cutting, disjoining, boning, and trimming of various meats.
  • Audit ingredients received from suppliers to ensure quality and compliance with regulations.
  • Accountable for maintaining the cleanliness and proper handling of the butchery, cold rooms, materials, and equipment, ensuring adherence to hygiene policies (HACCP) and regulatory standards.
  • Collaborate with the Quality Control (QC) team and Purchaser in selecting raw materials, monitoring inventory records, and reviewing processes for continuous improvement.
  • Conduct quality assessment of in-process and finished products, along with documenting recipes and food preparation procedures for training purposes.

Key Requirements:

  • Preferably 10 years of experience working with ham, sausages, and marinated products (pork & chicken).
  • Working knowledge and experience in the HACCP program.
  • Solid knowledge and skills in ham and sausages production processes and recipes.
